A premium-quality baker’s flour that has been milled from the center of the wheat kernel. This premium grade flour is ideal for bread making. It can also be used for broader applications thanks to its absorption, fermentation and mixing tolerance. It has a protein content between 12.2 - 12.8% and is great for making pizza crusts, cinnamon rolls, pretzels, flat bread, yeast bread, and of course sour dough.
